Food-grade citric acid is safe in the amount used here, but it is acidic enough to erode tooth enamel with repeated exposure. Rinse your mouth with plain water after eating these, and do not increase the citric acid to make them more sour; use extra lemon or lime zest instead. Eating spoonfuls of the raw powder can burn the mouth and throat.
Pop one or two chews every 20-30 minutes during runs over 60 minutes. The sourness helps cut through palate fatigue on long runs. Citric acid is available at most grocery stores in the canning section, or online. Use silicone ice cube molds for clean, uniform cubes. Store in the fridge for up to 2 weeks in an airtight container. Use food-grade citric acid, sold in the canning or baking aisle and often labelled sour salt. The citric acid sold for cleaning and bath bombs is not made to food standards and should not go in anything you eat.
In a small saucepan, whisk together the orange juice, lemon juice, honey, maple syrup, sea salt, and food-grade citric acid.
Sprinkle the gelatin evenly across the surface and let bloom for 5 minutes without stirring.
Heat over low heat, stirring constantly, until the gelatin is fully dissolved (about 3-4 minutes). Do not boil.
Pour into a silicone ice cube tray or small square mold.
Refrigerate for at least 2 hours until firm. Pop out of molds and store in an airtight container in the fridge.
