Rice Cakes

1.5 cups sushi rice
2 cups water
1/4 cup grated parmesan
2 tbsp olive oil
1 tsp fine sea salt
1/2 tsp flaky sea salt for finishing
1/4 tsp black pepper
Notes

Eat one rice cake every 45-60 minutes during runs or rides over 2 hours. The savoury flavor profile is especially welcome late in long efforts when sweet gels and chews start to feel cloying. Wrap individually in foil or parchment for easy carrying. Best within 2 days of making, refrigerated.

Rinse the rice until water runs clear. Combine with water in a saucepan. Bring to a boil, then reduce to low and simmer covered for 18 minutes. Let rest covered for 10 minutes off heat.

1.5 cups sushi rice
2 cups water

Transfer rice to a large bowl. While still warm, fold in the parmesan, olive oil, fine sea salt, and black pepper.

Line an 8x8 baking dish with parchment. Press the rice mixture firmly into the dish in an even layer (about 1 inch thick).

Sprinkle flaky sea salt on top. Cover and refrigerate for 30 minutes to firm up.

Lift out by the parchment, cut into 6 squares, and wrap each in foil or parchment for portability.
