For optimal pre-run fueling, it is recommended to prepare the chicken breast in advance. Cooked chicken can be stored in the refrigerator for up to 3-4 days, making this a quick assembly meal. If you are doing a shorter or less intense run, you might opt for fewer wraps or a smaller portion. For longer, more intense efforts, ensure adequate hydration alongside this meal. A good substitution for light cream cheese could be a low-fat Greek yogurt mixed with a touch of mayonnaise for a similar creamy texture and added protein. These wraps are best consumed fresh, but can be prepared a few hours ahead and stored in an airtight container in the refrigerator. Allow them to come to room temperature slightly before eating for better digestibility. Avoid adding high-fiber vegetables or excessive sauces to maintain the low-fiber, easy-to-digest profile crucial for pre-run meals.
In a medium bowl, combine the shredded or diced cooked chicken breast with the light cream cheese, garlic powder, salt, and black pepper. Mix well until the chicken is evenly coated.
Lightly warm the spinach tortillas in a microwave for 10-15 seconds or in a dry pan for a few seconds per side to make them more pliable.
Lay out each warm tortilla. Spread an even layer of the chicken mixture over the center of each tortilla, leaving a small border.
Top the chicken mixture with a handful of fresh baby spinach leaves. Carefully roll up each tortilla tightly to form a wrap.
Serve immediately or pack for later consumption, ensuring it is eaten within the recommended pre-run window.
