For optimal digestion and nutrient absorption, it is recommended to consume these bars with a glass of water. To adapt the recipe for higher energy needs during intense training, consider adding a tablespoon of finely chopped nuts or a few chocolate chips to the mixture. For dietary variations, almond butter can be substituted for peanut butter, and flax seeds can replace chia seeds. These bars can be prepared ahead of time and stored in an airtight container in the refrigerator for up to one week, or frozen for up to one month, making them a convenient grab-and-go option for busy runners.
In a food processor, combine the pitted Medjool dates, natural peanut butter, maple syrup (if using), vanilla extract, and a pinch of salt. Process until a thick, sticky paste forms.
Add the rolled oats and chia seeds to the food processor. Pulse until just combined and the mixture is crumbly but holds together when pressed.
Press the mixture firmly into silicone bar molds or a parchment-lined 8x8 inch (20x20 cm) baking dish. Ensure it is evenly distributed and compacted.
Refrigerate for at least 20 minutes, or until firm. If using a baking dish, remove from the dish and cut into 4-5 bars.
