To adapt the recipe for higher energy needs during intense training, consider adding a tablespoon of finely chopped nuts or a few chocolate chips to the mixture. In a food processor, combine the pitted Medjool dates, natural peanut butter, maple syrup (if using), vanilla extract, and a pinch of salt. Process until a thick, sticky paste forms.

Add the rolled oats and chia seeds to the food processor. Pulse until just combined and the mixture is crumbly but holds together when pressed.

Press the mixture firmly into silicone bar molds or a parchment-lined 8x8 inch (20x20 cm) baking dish. Ensure it is evenly distributed and compacted.
