Make a batch of 4-5 shots and store in small sealed jars in the fridge for up to 3 days. The earthy taste is strong — the lemon and honey balance it out. If you have a juicer, use it. If not, blend and strain through a fine mesh or cheesecloth. Do not skip the salt — it helps with electrolyte uptake.
Peel and roughly chop the beetroots. Grate the fresh ginger finely.
If using a juicer: pass the beetroot and ginger through the juicer and collect the juice. If using a blender: add the beetroot, ginger, and water to a blender and blend until smooth, then strain through a fine mesh sieve or cheesecloth, pressing to extract as much liquid as possible.
Stir in the lemon juice, honey, and sea salt. Mix well until the honey is fully dissolved. Taste — it should be earthy, slightly sweet, and bright from the lemon.
Pour into small 100ml shot glasses or sealed jars. Refrigerate until ready to use. Shake or stir before drinking. Makes 4-5 shots.
