
Banana Oat Breakfast Bars
Eat 90-120 min beforeThe simplest possible pre-run bar. Just bananas, oats, and a handful of mix-ins. A homemade alternative to commercial breakfast bars with zero added sugar and no oil. Five minutes of prep, twenty minutes in the oven.

Eat one or two bars 90-120 minutes before a run, or as a quick breakfast on training days. Use very ripe, spotty bananas for natural sweetness. The bars are soft and benefit from a quick toast in the toaster oven if you like a crispier edge. Store in an airtight container for 4 days at room temperature, or freeze.
Preheat the oven to 350°F (175°C). Line an 8x8 baking dish with parchment.
In a bowl, mash the bananas until smooth.
Stir in the oats, raisins, walnuts (if using), cinnamon, and salt until everything is evenly coated.
Spread the mixture into the prepared dish, pressing down firmly to compact.
Bake for 20-22 minutes until the edges are golden and the center is set.
Cool fully in the pan before lifting out and cutting into 8 bars.
