2 slices Sourdough Bread
100 g sliced turkey breast
1/2 ripe avocado, sliced
1 handful baby spinach
1 tbsp Dijon mustard
1 tsp butter
Pinch of salt and pepper
Notes

Use the Sourdough Bread base recipe or any quality sourdough. Press down gently with a spatula while grilling to get even contact and a crispier crust. The spinach wilts just slightly from the heat but keeps some body since it is inside the sandwich.

Layer the turkey, avocado slices, and spinach on top. Season with salt and pepper. Close the sandwich.

100 g sliced turkey breast
1/2 ripe avocado, sliced

Heat a skillet over medium heat and melt the butter.

Place the sandwich in the pan and press down gently with a spatula. Cook for 2-3 minutes until the bottom is golden and crispy.
