
Recovery Protein Truffles
Bite-sized chocolate-coated protein truffles made with whey, almond butter, dates, and dark chocolate. A homemade riff on commercial protein bites like Quest Hero Bites or No Cow Truffles. Decadent enough to feel like a treat, balanced enough to count as recovery.

Eat 2-3 truffles within 60 minutes of finishing a hard run for a quick recovery snack with carbs, protein, and a small amount of fat. The chocolate coating sets firm in the fridge, making them easy to grab. Store in an airtight container in the fridge for up to 2 weeks, or freeze for 2 months.
In a food processor, blend the dates, almond butter, whey protein, cocoa powder, honey, sea salt, and vanilla until a thick dough forms.
Roll the mixture into 12 small balls (about 1 tbsp each). Place on a parchment-lined tray.
Freeze 15 minutes to firm up before coating.
Melt the chocolate chips and coconut oil together (microwave in 20-second bursts).
Dip each truffle in the chocolate, letting excess drip off, and return to the parchment. Sprinkle flaky salt on top.
Refrigerate until set, about 20 minutes. Store in an airtight container in the fridge.
